Welcome to The Greyhound Charcott, we are delighted to introduce you to our wonderful team here. We've built this team up over the past six and a half years as our time here has evolved. 

 

We started with just four of us at the beginning and now have over twenty team members. Here you can learn a bit more about our core team members that you're likely to meet when visiting us. They're supported by our wider team of part time staff, many of whom are exceptionally loyal having joined for their first jobs, and kept coming back in between studying, which is great!

RICHARD LEE

Business Owner

Hi, I'm Rich, I originally trained as an Electrician, subsequently gaining extensive property development experience over the years, which has helped enormously in the renovations we’ve undertaken at the pub.  I'm fortunate to be blessed with a good palate and can turn my hand to cooking as it was always a passion of mine from a young age. Therefore, I am able to support Sean, our Head Chef, with running our kitchen at the weekends. Not forgetting of course that I enjoy making pizzas and became renowned for them locally as it was what helped us to survive the lockdown periods throughout the pandemic! 

I have a very practical approach and like to make things happen, I'm ambitious, competitive, and enjoy banter in the kitchen and at the bar, sometimes I definitely get a bit loud! I love real ale and always ensure we have a great selection available to sample here on our bar.

FRAN LEE

Business Owner

Hello, I'm Fran, my background is within HR, Payroll & Communications as well as Office Management & Facilities so pretty diverse, and within two very different business sectors from hospitality, being the finance and automotive industries.  Here though, I manage all the behind the scenes running of our business including staff employment and management, accounts, menu planning, suppliers etc and am also very much regularly customer facing too, so generally I’m fortunate enough to know a lot of our lovely customers on first name terms!  I manage our offsite events too as we offer bespoke catering options for private functions such as weddings and parties and lastly I also take care of all bookings for our beautiful little cottage here in Charcott for bookings as we run this through AirBnB to welcome guests as well. 

When we do have a bit of down time (which being honest is quite rare these days, as we do have quite a bit going on!) we love to travel and visit somewhere new, ticking off a different country. We both come from big families so a good catch up with them or heading out to eat with friends or family, is always good for inspiration for our menus!

BOBBIE

My name is Bobbie and I have been a part of Team Greyhound since gradually reopening after lockdown in 2021. Initially starting on a part time basis, my role has grown into a full time position as after taking time to travel amidst my gap year, a 5 month trip around Central America, I returned to support the management of Front of House.  I am known in the team for being pretty meticulous in my approach and therefore I manage most group bookings and event menu pre orders too.  

 

In my spare time, I am either out riding my horses, catching a film, spending time with friends and family or indulging a guilty pleasure of shopping at Bluewater!

 

Fun Fact- I qualified nationally in Trampolining with my previous school.

SABRINA

I'm Sabrina and I'm full time here helping to manage Front of House at The Greyhound.  I have been part of the team since the Summer of 2018 and known Fran and Rich for a long time, so you could call me part of the furniture here and most definitely part of the family! 

 

I'm methodical in my approach and love to be organised, especially with my label maker!  I ensure that the pub is always in tip top condition and we have a great selection of products available as I manage the majority of the front of house orders.  I take pride in ensuring that all who visit us are well looked after here with a warm smile and good service as soon as they arrive. 

I love catching up with friends on my days off and can't resist a bit of a boogie and a chilled glass of rose! 

 

Fun Fact - I'm a bit of a beauty queen and definitely couldn't face life without my beloved eyelashes!

FRONT OF HOUSE

AMY

Hi, I'm Amy, I joined Team Greyhound in Spring 2021 when the pub reopened following the long lockdown period, I usually work on weekday lunchtimes as this fits in with family life too. I live in Leigh and am very much  involved with the local community through Leigh Primary and the Parish Council too, I always enjoyed regularly visiting the pub as a customer long before I moved in behind the bar!

 

Fun Fact - despite having children no one runs rings round me more that my working cocker dog, Gus!  He is total mischief!

ELLISHA

My name is Ellisha and I am the newest member of Team Greyhound having been a regular customer and village local for sometime. I previously had my own business but am taking some time out from that for the moment and can't cope with not being busy so joining the team here was the obvious choice! 

I am very focused on excellent customer service and ensuring that we deliver only the very best experiences to all the customers visiting here.  I usually work weekends when I'm definitely needed most!  I absolutely love getting to know the customers here and finding out what bought them to The Greyhound.  

 

Fun fact - I grew up wanting to be a Patisserie Chef and started a career in hospitality, but now after 10 years away from the industry I am back to it as have joined of our Front of House Team.  

KITCHEN TEAM

SEAN

Hi, I'm Sean and I'm the Head Chef here at The Greyhound. I've been working in catering for 16 years, and joined Rich and Fran in the Autumn of 2018.

 

I run a tight ship in the kitchen here, taking pride in ensuring we have a robust systematic approach and can take pride  in our regularly changing and seasonal menu. I am also supporting the development of our team with a young chef currently doing an apprenticeship. 

 

When not at work, I enjoy spending time with my partner, Amy and our border terrier puppy, Frank. He keeps us pretty entertained as is a lively little character.  I love being outdoors, do lots of walking and exploring of local areas.

 

Fun Fact - I have quite a collection of Bonsai trees too which, although tiny are pretty expensive and also keep me busy!

JO

Hello, I'm Jo, I've been part of the Greyhound team since we emerged out of lockdown in 2020, having first supplied the pub with my cakes for their pop up cafe during the pandemic.  I've known Rich and Fran as friends for over 10 years,  during which my career was in graduation photography. 

 

You'll always find me taking pictures as that's in my blood but my other passion is baking and I also have my own little sideline business, Mountjoy Kitchen too.  I specialise in delicious biscuits and tasty cakes, well know for my carrot cake! Here, I work part time  in the kitchen alongside Sean and Rich and always ensure the puddings here are on point, especially the shortbread! 

 

Fun Fact - I am also dog mad and currently have 5 dogs to  keep me on my toes!

MAX

I’m Shabenzu aka Max, I’m almost 21 years old and an apprentice chef working in the kitchen, although you may recognise me from my days behind the bar as I've been with the team just over two years now.

 

I am a sporty person mainly playing golf and football when I can, including Tuesday evenings with a local team.  I’ve supported Arsenal FC for as long as I can remember so I’m constantly smiling! My favourite drink is a Hofmeister top, I’ll Follow the Bear wherever he may go!

 

Fun Fact - My favourite pass time is telling horrendous Dad jokes to lighten the days of those around me!  Not sure about a career in stand up comedy yet though!  

 

 

Also behind the scenes...

In addition to each of those mentioned here we have a great team of supporting members of staff in the kitchen which cover off all the things like endless washing up, vegetable prep, making chips, preparing burgers and keeping our kitchen in a spotlessly clean condition!  They are mostly students working part time between 4 - 10 hours a week here around their studies and currently include:

Charlie, Will, Ollie M, Sam, Dan, Ollie L, and Harry.

In our Front of House team we are also supported by Remy, Tabby and Katie who all also work part time around studies and travelling but also always ensure that they bring the very best of customer service to you!
